You will not find them with spotlight (nor with the search box of a finder window, because that also uses spotlight). Reason being that Library is a system folder and is excluded from spotlight search database.
You want to look into ~/Library/Preferences/EVE Online Preferences/p_drive/My Documents/EVE/logs
There are three directories there, but I think you can figure out where's what yourself.
