I just recently got Heavy Assault Ships skill to 4, and now I think I am just about ready to jump in one. The following are my skill listings, any comments/critiques welcome...

I am currently training Heavy Assault Missiles to 5, 6 days remaining.

You will definately want to get heavy missiles 5/ heavy missile spec 4 so you can fit tech 2 heavy launchers unless you have the isk to drop on CN launchers. I also use assault launchers on mine from time to time, you may want sdt missiles 5/spec 4 as well.

Any module you fit on the ship... having that skill to 5 is a good idea if you are going to specilize in HAC's also the energy system skills to get better cap recharge are nice, but not necessary.

So you would recommend Heavy Missiles V on top of Heavy Assault Missiles V?

And standard missiles to 5 is another thing I was planning to do, if ony because of my crow/hawk.

Eventually you'll need heavies, be it for a NH or something else.
So I's say train it.
Although when you get a NH you'll probably be using CN's, it's good to be able to use T2 heavies (and HA's if you use them, personally I don't).

I'd start to train gunnery if I were you, all the lewt PvP ship use gunnery and personally I think getting support missile skills to V is not worth the time it takes. (Its 80% for PvE...)
Still, if you must, get Rapid Launch V / warhead upgrades V / Projection V / Precision V
(id get them in that order, but if you intend to PvP a bit, swap precision for projection)

If you rather go to gunnery, get rapid launch V because its good and fast to train. leave the rest =)
