What the heck is the difference? I've read the description several times and still don't get it. Enlighten me.

Interdictors are based off the destroyer hull and require significantly less total skillpoints than heavy interdictors to use effectively. Interdictors launch bubbles from a dedicated launcher on the ship, that then exist and operate independently of the interdictor for as long as they last (they have limited duration and can be destroyed). Interdictors can be mean frigate hunters (esp. the Sabre), but its easy to lose your pod while flying them, as they are primary targets and have low EHP. Getting killed in your own bubble is a fairly common occurrence, so many more experience pilots shun them. In non-0.0 space they are of limited use, as their primary purpose - to launch bubbles - can't be used in empire.

Heavy interdictors were introduced to tackle super-capitols. Their bubble is generated directly on the ship, so they cannot bubble and run/cloak/jump like the light interdictors can. In stark contrast to regular interdcitors, They all possess monster tanks, making them poor primary targets in "most" standard situations (they will be called primary to save or protect your own capitols). Unlike interdictors, their bubbles can be used in non-0.0 space with scripts, transforming their bubble blower into a infinite-strength warp scrambler. The infinite point can tackle otherwise invulnerable ships, such as supercaps or ships in triage/siege, and can be used to guarantee normal stabbed ships can't warp in highsec or lowsec. Thanks to their impressive tanks and infinite points, heavy interdictors see a lot of use throughout EVE, instead of being confined to just 0.0 operations. Their limited mobility does make them less attractive for some types of 0.0 gangs, however.

Interdictor bubbles cannot be destroyed.
Interdictors can fit more than one bubble launchers, and are pretty fast - unlike HICs which are almost stationary with their bubble active.
Interdictors unlike HICs can be RRed while bubbling.
Interdictors can fit a cloak, decloak, bubble up and cloak again. HICs cannot cloak before their bubble cycle stops.

Dropping a bubble with interdictor is like dropping a normal probe, your ship functions normally and you can fly out of the bubble.

Activating HIC bubble is like painting, webbing and bubbling your 200mil uninsurable ship for 30sec.
Warp disruption field generator (WDFG) also denies all remote assistance when active, in both modes.

Scripted WDFG works as normal warp disruptor, although the point is considered infinite and can be applied on supercapitals.
When scripted, the duration is much shorter, only 6sec.

I see Sabres are used alot. I'm Gallente . Is there that big of a difference b/w the Eris and the sabre? I'd prefer not to have to crosstrain so soon.

Sabres can be fit to put out a metric ton of DPS for their hull size. Eris can as well, but have half the range and are slower. All Dictors do not have that 25% ROF penalty compared to their T1 counterparts. A Sabre can get close to 10k EHP. They basically destroy frigs and can put the hurt on some cruiser hulls too.

It works like this:

Sabre: Viable as a solo ship if you pick your targets, some survivability in small gang fights

Others: disposbable flying coffins. Fit double bubble + proto cloak + MWD.

The dictor speed nerf a while back killed off everything except the Sabre. Which is especially ironic because the Sabre was the reason for the dictor nerf in the first place, but hey, :CCP:

EDIT: If you're flying Gallante, you might as well cross-train now. It's not just dictors that Gallante are terrible at.

they both do the interdictor (drop bubble and run away) role equally well.
the sabre is more used because its slightly useful as a solo boat you can bubble a gate and kill something while you are bored.

but be happy with the price of a sabre you can buy 2 eris and believe me interdictors go boom quite often
