So let me clear this up, just finished training for recon ships but a bit low on the iskies atm to get one. Will flying a covert ops ship be good practise for flying the recon ship later on? If so which are best for Gallente? Was planning on getting an arazu.

Covert ops and the recon ship equivilent are very different. Covops frigates are largely for scouting and probing, and otherwise moving unseen. Recons can do that; but have a far greater role in combat besides being a comedy killmail. (Seriously; a 25mil-ish frigate with poor firepower and tank as well as non existant ewar capability is not something you want to be in if a hostile ship so much as looks your way)
If you want to have a vague idea of what it'll be like flying an arazu, I suggest you try an electronic attack frigate or Celestis.

Try the blackbird if you're aiming for the falcon. Almost the same.

Fly the t1 version of whatever ship you're training. Thats really the best way you can learn it. The difference though will be if you're flying the cloaking recons, on those you will fit similarly but fly entirely differently since you will be relying on your cloak for surprise and to pick targets.
