Does EVE allow the building of anything that is not subject to attack and eventual loss? Even in High Sec areas, if I build a station or hang out to mine, am I subject to attack? I'd like at least one of my toons to play the game in a very laid back manner, just build my stuff over the years and be left alone, even if it means small profits. Any info will be much appreciated!

Hmmm... I don't believe that there is anything that is not subject to attack.. Although if you're in a high security system you shouldn't need to worry, there won't be many attackers.

As far as I'm aware no station has ever been destroyed, either player or NPC built.
On high sec mining you can be attacked anywhere, at any time. The police are rather unforgiving of people fighting in high sec areas but destruction of your ship is indeed possible regardless of where you are, especially if you aren't paying attention.
Saying that though, in my experience open hostilities in high sec space are very rare. In all my time playing I've been attacked only once by PC pirates, who failed to kill me since I observed the better part of valour and legged it.
Unless you're under attack by a determined band of troublemakers then there is not much to fear in high sec space.

Golda they can, but to destroy one will require an immense amount of firepower.
