I'm very new to trading, and therefore I have no experience on what items to focus on in my region.
Is there anyway to tell if an item is getting bought/sold alot?
Also, how fast should I expect my orders to fill?

Check the price history tab in the market window. There you see the "volume" which shows the daily amount of units turned over.

As for how fast you expect your orders to fill - that depends on the item you're buying/selling and how big the range is and if it is a trade hub or not and how many competitors there are ... and alot more factors. The best would be to try it out.

In Game:

Go to Market
select the item you want
select price history
select show table
order by date
look at volume in the last day/week/month

if you select show graph you can see a cool graph, on the bottom the green bars shows the volume
