I tried looking for a post on this topic but can't find it. If it exists, please pardon the double post...
While backing up and restoring the "Eve Online Preferences" folder will let you recover old settings, I prefer to recover only the exact settings file that hold the relevant information, so I don't restore problematic files unnecessarily.
I dug around and found that this file holds the settings preferences for my character:
/Users/yourMacUserName/Library/Preferences/EVE Online Preferences/p_drive/Local Settings/Application Data/CCP/Eve/settings/char_772114892.dat
Your character will have a number other than 772114892. If you have three characters in your account, you should have three char_#########.dat files. To find out your character number, go to
/Users/yourMacUserName/Library/Preferences/EVE Online Preferences/p_drive/Local Settings/Application Data/CCP/Eve/cache/Pictures/Portraits
and look for your character's portrait here. Backing up this folder will also backup portraits that you clicked on before.
