So, I installed Trinity in OS X, runs fine. Can't see the premium stuff, so I went to Windows via bootcamp and installed Trinity there. AWESOME graphics. However, now my graphics card is shooting up over 110 degrees fahrenheit when running EVE. I have no overheating issues in any other program or in OS X, only running EVE. Anyone else have this issue?

I'm running a Mac Pro with an ATI x1900xt and before anyone mentions it, no, it's not a graphics card revision that was known for overheating. Checked that already :P This ONLY happens with EVE.

I should also mention that it makes my screen shut off and I have to shut off my Mac Pro until the graphics card cools down enough to allow it to turn on.

That's only 43c, sounds very fishy that the card is conking out at such a low temp. I'd sit it in Windows and run something like 3D Mark and watch the temps whilst checking for airflow from the vent(s). Also if your using it on your lap see if it being deskbound helps (airflow underneath... natch).

Not saying anything is wrong, but that's a very low temp for a gfx card to be going wobbly.
