This will never change. As soon as you have a fully fit Tech II ship, it will be carriers that can destroy you in seconds, once your in carriers then the Supercapitals can kill you.
Mining is the most boring and ass end way to make money in eve, especially for a new player, and yes the older pirates will look at your info, decide you are a totally new player and try do do their worst to you.
There are lots of avenues in eve, but rarely are they any good if you are all alone in New Eden.
May i suggest you apply to Eve University corporation, it has a large active user base with players of all standards giving advice and helping each other. Once you enter a Corporation that is focus'd on what you would really like to do in the game, you will find yourself with much more isk, and the strength that can come in numbers (but not always lol).
Mining is profitable but is slow and extremely boring, which is why these Mad Max style pirates just come and pinch your ore. I have not mined since the tutorial missions in Eve, and hate the task, even though some love it, mining may not be your real desire, maybe you'd like to scam people, or go running missions, or live in a wormhole and kill the sleeper sites. Look around, see what people are doing and get some advice from older players.
I will just also add that mining in Eve is not like mining in say, World of Warcraft, if you choose to mine you will need to dedicate a whole load of time to those skills, which for someone new to the game may really want to be in a small fleet learning how to PvP, which can be done extrmemly cheaply and can be sustained from running missions and salvaging.
Get a frigate or destroyer, or both, and start running missions for a corporation and grind and grind and soon you will be gettin nice isk from running the missions, a PLEX doesnt hurt to get some back up funds to begin, just stick to cheap Tech 1 hulls and mods until your are more skilled and can fit your ships etc.
Griefing is a part of Eve, and some players will always go out of their way to make your life torrid, but, this is also the richness of Eve, where as long as it falls within the normal game mechanics, it ok to do!!!
So, Capsuleer Aayla Reyvar, forgot the boringness that is mining, join Eve University and ask about learning to PVP and how to support yourself without mining, or mining with a fleet which makes it LOTS more profitable and ten times safer. Safety in numbers.
Pvp training will also teach you how to deal with hi sec griefers who decide to flip your cans, once a pirate flips your can, he can only shoot at your ship if you have shot at him 1st, this includes drones that are on aggressive setting so be careful of that, another way around this is to use password enabled cargo containers that you can purchase from any of the major trade hubs that will make it a lot less likely that anyone will bother to try and get your loot.
The other great thing about Eve is that you can add the guy who warp scrambled you for an hour and return the favour in time, and wave, and say REMEMBER ME YOU ****ING PRICK DIEE!!!!!!!! GO PVP!!!
