Engineering and Electronics first no matter what you fly.
Then if you plan to do shield buffer tanks with shield extenders you should train Shield Upgrades, if you do armor tanks you can delay it.
Then you have Weapons Upgrade and finally Advanced Weapons Upgrade.
There are a handful of other skills that are technically fitting skills like Electronics Upgrades and Energy Grid Upgrades but in general you should just consider them prerequisites skills for what ever modules you want to use. Even with them at level 5 you will only save single digit cpu and only on specific setups.
Once you get into rigs the specific weapon rigging skills will also work as fitting skills (reducing the pg increase of fitting weapon rigs). But that's something you can delay training a bit.
