Hello i'm planning to put up a POS in a 0.5 or 0.6 system (does the two number difference matter in terms of security?) and I'm looking to what options I can have with the most potential for making isk

However I'm entirely sure which assembly arrays are allowed to be used in highsec, obviously not large assembly lines; but I'm looking to add labs/drone and something else if I can...

Can all be done in a small tower? Or would I really need to get a medium one

First, any structure that is restricted to some space has a line in its details: "can only be anchored in systems with security status less than X" (note: you can't anchor it in system with security status X) - something like that, anyway.

As for the tower I'm not sure about small one: it only can fit up to 3 labs (on caldari one, if you planning to have at least corp hangar which is handy for emergency fuel storage), and that's is mostly what you'll need for one character dedicated to research (for two characters that's not really enough, but might do). So you might be able to have all structures you need on small one - get some application with POS fitting to check. Just keep in mind few things:
1. if you putting up a POS - might a well train two other characters (usually unused anyway) on account to copy (maybe even research) blueprints so you'll have a bit better income from it (why put up a POS that won't even pay for its fuel?), and for 3 characters you'll need at least meduim one.
2. Small tower (especially undefended) is rhater easy to take down during war.
3. instead of using assembly arrays you might want to use a station instead: yes, it takes more time to build stuff, but if you don't run your manufactuinrg lines 24/7 and/or don't fancy filling assembly arrays with materials needed for production - no real point in using those. Not to mention that you'll need several arrays to have meningfull number of manufacturing lines.

The only difference between 0.5 and 0.6 is the standings your corp needs. It can be a lot harder finding empty moons in 0.5.

You can put up any assembly array except the one that builds super-caps (which requires sov in 0.0) The one that builds regular caps can also build battleships, freighters, and orca, and is fine in highsec. However, the only assembly array really worth running in highsec is the T3 one. You may find special cases where another might be convenient, but they are usually a waste of the purchase cost and the fuel to run them.

The size of tower needed depends on how many of what modules you want to run. There are quite a few POS fitting tools, plus NPC seeds on sisi. There shouldn't ever really be a doubt about your setup before you start.

It's kind of worth noting that POSes don't easily fund themselves. The only situations I've seen where they might is if you're doing steady T3 production, living in w-space/0.0, or you do complex reactions in lowsec. Personally, I only ever run a POS for temporary jobs on my S&I alt, and then pull it down as quickly as possible afterwards. Do your maths beforehand, and determine if your highsec POS has a measurable income rather than some phantom income. If you can't make it directly pay for it's own fuel through T3 or BPC production, you probably don't want it running nonstop. If it doesn't feed you, it's eating you.
