I've been training toward a tengu since I started a few months ago, but i'm not sure what 'extra' skills to pack into my plan for long-term wormhole living.

Currently i've got:
-Scanning skills at IV
-Core Compentency skills IV - working on V
-Decent launcher/combat drone skills (the latter are mostly for my drake which i'm using in lieu of getting the tengu)
-Archeology/hacking/slavaging IV
-Relavent rigging skills (jury, launcher, shield) IV
-Covert Ops

So, are there any other things to add to my laundry list? I want to have as many options as possible since I hear wormholes can get a little dry at times. Other things I had considered adding but not settled on: Gas harvesting, Mining/Hulk (can fly a retriever from my rookie mining days atm), PI skills, Anchoring skills/POS gunner skills, transport ships.

What you listed is practically a full list of things that are needed for any shield based WH Operation.
With mineral prices being low at the moment mining is much less important than decent ratting/gas skills.

What you may want to add to your list are pvp skills. With you already piloting Drakes that basically means propulsion jamming lvl 2 to fly a pvp setup Drake. Being caldari another option would be expanding into the ecm ships or (heavy)Interdictors.

You didn't actually mention shield skills, so I hope you've got those.

You will want to be able to mine gas and mine ore, as well as fly some kind of hauler (blockade runner is best!)... not because these are necessarily high-value skills, but because there will be boring days when the only site in the system is a gravimetric (mining) site. Being able to harvest anything and everything that comes up is a good way to make the most of your time in the great unknown.

If your corporation is living out of a POS, you may want to train up remote shield repair. When your POS gets attacked (and it will), you can be a big help by flying a POSPREY to repair the shields. Starbase Defense Management is another handy skill that will help you win friends and influence your corp leadership, although it takes Anchoring 5 which is a big pre-requisite.
