Well while you're trying to decide, might I advise you get the basic learning skills to 3 or so? That will take you a day and will save you that day back within a few more.

Well, you are kind of wide open to do whatever you want. The question is, what do you want to do right now? How patient are you? How awesome do you want to be later?

I don't know for sure but I would say it's very hard to be awesome at PvP and Industry at the same time (at least early on, in years from now you could be awesome at both, maybe).

So some suggestions:

If your patient get the basic learning skills to level 5, 4 at minimum.
If your really patient get the advanced learning skills to 4, but anything is good.

If you want to fly ships better get your Electronics, Engineering and Mechanics to 5 quick!

Then you might want to go for the basic or standard Core Competency Certificate (open up your Certificate browser and take a look in game, it's fun!)

Then start on support skills like shield or armor (Caldari is usually shield I think). So:

Shield Management
Tactical Shield Manipulation
Shield Operation
Shield Upgrades
Hull Upgrades
Shield Compensations (there are four of these, one for each damage type)

Then you can work on gun, missile, or drone skills to do more damage. (pick a ship you want to fly, get a fitting for it in mind and try training the skills to get that fitting).

If you want to go industrial, check out Halada's mining guide (you can google it, or check out the sticky in the Science and Industry forum). It gives you whole paths for skills on ships and lasers and other things pertaining to mining and industry.

Also, get EveMon, quickly... it will help you to plan, train and shorten your training times.

Like others said: Get EveMon if you don't have it already and learn to use it.

PVP and Industry have only very little intersecting skills so I suggest you pick one and focus on that for a while. Then build up your support skills to a respectable level before you switch to the other path.

Industry:
The Complete Miner's Guide by Halada is the most comprehensive guide on Mining around. Read it. It will guide you from humble beginnings to the professional level.
Basically you're goal is to eventually fly a Mining Barge and maybe later even a Hulk.

Support skills:
Everything that gives you more Cap, Powergrid, CPU, Shields, Armor, Resists or decreases the fitting cost of common modules. Have a read through EveMon's Skill list to identify those.

PVP:
Depending on your desired style and role these skills vary but generally you'll want to grab your target and deal massive amounts of damage. This means training for Webs and Scramblers, Microwarpdrives, Weapons and weapon enhancements (like Gyrostabs, ballistic control units and the sort).
