Some help from our more experienced players please.

I have a conundrum. My small hybrid turret skill is at 5. I don't ever remember training past 2. I'm guessing that because I use rail guns almost exclusively it kept going up. It makes sense, the more you use a skill the better it gets even without training.

My issue is some skills like mechanic level 4, and iron will level 4 are asking for 1 day 13 hours to train. Is there a trick or something to bring these numbers down or is this just EVE.

By my estimate I need mechanics, electronics, engineering, and a couple of others to move up. That's over a week for just five or six skills when I usually spend a couple of hours.

No no no no no...

You have it all wrong...

First off, skills in EVE train in real time, you right click a skill, tell it to train, and after the set amount of time it finishes whether you are playing or not. There is no other way to train skills (so, no, using your railguns did not raise your small hybrid skill).

Second, to speed up training you train up learning skills. Each skill has an attribute assigned to it which determines how fast you gain SP for that skill, the higher the attributes the faster the skill trains. Training up learning skills will raise your attributes thus allowing you to train skills faster. You can also install implants which increase your attributes thus speeding up training time as well.

Third, you picked a career path at creation which gave you small hybrid 5 to start, which is why you don't remember training it to 5... It was already there when you started.

You probably started with a higher level of Small Hybrid Turret than you remember. The soldier career paths start with that skill at level 5.

The only way to decrees training time is to increase your attributes: learning skills and implants.

Also note, skill training times increase exponentially with level: a level 5 requires 32x as many skill points as level 3.

Your experience sounds about average: getting skills to level 3 takes hours, getting up to level 4 takes a day or two, level 5 your are looking at several days, possibly weeks.
