I am doing a fair bit of lowsec hauling these days, currently using a Prowler with covops cloak and have managed to sneak through many lowsec gank-points successfully. But I need a ship with a larger cargo capacity, where covops is not an option.

I'm assuming that warp core stabs are the logical low-slot fitting, but what do people find best to stick in the med slots of a bog standard hauler?

Mammoth with regular cloak and MWD, and then learn how to do the MWD+Cloak trick.

I myself use a mammoth with warp stabs, and inertia stabs. in the mids I fit a buffer, and cloak on top. So far so good. Some people fit nanos in lows and rigs for faster alignment.

I guess you mean ECM with lockbreakers. (Since the only items called lockbreakers are bombs). If you got spare mids you can consider an ECM burst, you just might get lucky. Normal ECM first requires a lock which takes quite some time, if you got free mids go ahead, but chance are pretty slim it will help you.

Tracking disruptors can at best make it take a bit longer before you die, but you still die.

Since you're flying minnie, as a last ditch defense, I recommend you put a rocket launcher into your high slot filled with defender missiles, yes it sounds silly, but every bit helps, and in this case I speak out of experience. Stopping those incoming missiles from hurting you works very nicely.

Also, you might want to look at the Mastodon, it has an inherent +2 warp strength, good cargo/lows, and very nice resistences/shield.

Align to gate/station then immediately hit MWD then the cloak. If you do it right, you can do this sequence (align -> mwd -> cloak) in less than a second. After you aligned, just hit the warp button.

Does anyone use mastadons? They've got a +2 on warp core strength as a bonus which would save a couple of low slots.
Stick a cloak on the high slot, maybe a ECM and shields in the mids and then the lows either something to help align time or extra cargo space?
Just a thought.
